Our Story
Sushi Hatake was founded by Takahiro Hirai.
At 32, he left his office job and spent six years as an organic farmer in Tajimi City, Gifu, growing over 50 varieties of vegetables. That hands-on experience — understanding how ingredients grow and change — became the foundation for Sushi Hatake’s standard.
After closing the farm, three years of travel in Japan and abroad followed. In 2023, he entered the world of sushi, training at “Sushikawa” before launching Sushi Hatake.
A farmer’s eye for ingredients, English built through travel, and a commitment to lifelong learning (he graduated university at 43). This combination is what Sushi Hatake is built on.
