That was the brief. A company in Tokyo was planning a team gathering and wanted to move beyond the usual izakaya reservation. They booked Sushi Hatake to bring the full omakase experience to a private lounge in a tower mansion in Gotanda.

## The Venue: A Private Lounge, High Above Gotanda

The venue was a residents-only lounge inside a tower mansion — the kind of space most people never see. Floor-to-ceiling windows with a nighttime cityscape, a clean kitchen area, and plenty of room to set up.

Tower mansion lounges and party rooms are some of the best venues for private sushi catering. They typically have running water, counter space, and power outlets — everything a sushi chef needs to work. If your building has one, it’s worth considering.

## What Was Served

### For All 11 Guests

Kohada (gizzard shad), ma-aji (horse mackerel), sumi-ika (golden cuttlefish), aka-ebi (red prawn), ishidai (striped beakfish), shime-saba (cured mackerel), madai kobujime (sea bream pressed with kelp), aka-kamasu (barracuda), sakura-ebi (cherry shrimp), and hon-maguro akami zuke (marinated bluefin tuna).

Spring ingredients like sakura-ebi and rich, fatty barracuda gave the lineup a seasonal character. Every booking is different — I select the fish the day before based on what looks best at market.

### Additional Pieces for Premium Guests (6 of 11)

Hon-maguro chutoro (bluefin medium fatty tuna), ama-ebi (sweet shrimp), ikura (salmon roe), isaki (chicken grunt), and toro-taku maki (fatty tuna and pickled daikon roll).

The Premium course adds luxury pieces like chutoro and ikura. The toro-taku roll at the end — rich tuna against the crunch of pickled daikon — is a perfect closer.
