Today, I’d like to talk about shari — the sushi rice — which I believe represents the very heart of sushi-making.

Shari Is the Soul of Sushi

In my view, shari (seasoned rice) is the most important element in sushi.
And I’m sure many other sushi chefs would agree. (Though of course, not everyone might share the same opinion.)

When most people think of sushi, their attention naturally goes to the fish.
Of course, the quality of the fish is important, but I believe that 70–80% of the sushi experience is determined by the shari!
In other words, the quality of the rice significantly affects the overall flavor of the sushi.

The Secret Behind Sushi Vinegar

To create shari, we season the rice with a blend of vinegar, salt, and sugar.
This sushi vinegar is what defines the true flavor of the shari.

It’s not an exaggeration—no matter how high-quality the fish may be, if the rice isn't properly made, the entire piece of sushi can fall apart.
On the flip side, even with modest ingredients, if the rice is crafted well, the sushi will at least reach a decent level of quality.

My Dedication to Perfect Shari

Through my training at Sushi Kawa and in providing my own sushi catering services, I have been deepening my commitment to making the perfect shari.
From selecting the right rice, to how it's washed, cooked, and seasoned—I've gone through endless trial and error to perfect each step.

One thing I pay special attention to is the temperature control of the rice.
It’s said that sushi rice tastes best when it’s slightly cooler than body temperature, and maintaining that delicate warmth is one of the true marks of a skilled sushi chef.

The Pursuit of My Own Sushi Vinegar

While continuing my training at Sushi Kawa, I am constantly seeking to create “my own unique sushi vinegar.”
There are basic recipes, but subtle adjustments in the seasoning can express a sushi chef’s individuality.

My background as an organic farmer has also helped refine my sensitivity toward ingredients.
Understanding the nature of rice as a crop allows me to better bring out its full potential in sushi-making.
