A Moment at Sushikawa Shared by a Customer on Instagram
Hello everyone! This is Sushihatake.
I have some wonderful news to share today. I discovered a photo that a customer took and posted on their Instagram story while I was making sushi at "Sushikawa" during my Tuesday and Wednesday shifts!
The photo was absolutely beautiful, so I sent a DM to the customer asking for permission to use it, saying "Could I have this image, would it be okay to use it?" They kindly gave me their approval. I'm truly grateful.
I rarely have the opportunity to take photos while making sushi, and there aren't many chances to see myself objectively, so it's quite interesting.
A Beautiful Moment Found in an Instagram Story
When I saw the photo the customer posted in their story, I thought "Ah, so this was that moment" and remembered it all over again. It captured angles and expressions I hadn't noticed myself, and being able to see my work objectively was truly educational.
When I asked for permission via DM, they kindly replied "Please feel free to use it," and I felt the warmth of the customer's heart.
Every Tuesday and Wednesday during dinner time at "Sushikawa," I have the privilege of making sushi for customers, but looking back at photos like this really motivates me to do better.
The moment of facing customers across the counter—this is the most precious time for a sushi chef. The feelings I put into each piece, conversations with customers, and above all, the desire to deliver delicious sushi.
Although not captured in the photo, the atmosphere and tension of the moment, everything becomes a valuable learning experience.
The Expanding Circle of Sushi Through Social Media
Because Instagram stories disappear after 24 hours, the moment preserved there feels even more special. I'm happy to think that the customer found their experience so memorable that they chose to share it in their story.
If a single photo can make someone think "Oh, that looks delicious" or "I want to try that place," there's no greater joy for a sushi chef.
Trust Relationship with Customers
Being able to receive photos is only possible because of the trust relationship with customers. I'm filled with gratitude thinking that they might have thought "It's okay for this chef to use my photo."
Through my training at Sushikawa, I'm learning daily not only technical skills but also the importance of communication with customers.
Applying Training Results to Catering Sushi Services
I want to apply the techniques and mindset I'm learning at Sushikawa to my catering sushi service as well.
While the tense atmosphere across the counter is wonderful, the relaxed sushi experience at customers' homes or event venues is also quite special.
I'd be delighted to provide the techniques and hospitality cultivated at Sushikawa at your special locations.
With the Spirit of Ichigo Ichie (One Time, One Meeting)
Every time I look back at photos, I'm reminded that encounters with customers are truly once-in-a-lifetime experiences. I want to cherish each moment and make sushi with all my heart.
I'm also working to provide explanations in English for international customers, hoping to share the wonderful culture of Japanese sushi with more people.

I provide the authentic Edomae sushi techniques learned through my training at Sushikawa at your preferred locations throughout Tokyo.
